Ingredients
¼
lb
rotini pasta
1
cup
black beans
canned
½
cup
tomatoes
diced
½
cup
red
orange, or yellow pepper, diced
½
cup
corn
canned or frozen * see note
¼
cup
cilantro
chopped
Dressing
3
tablespoon
canola oil
2
tablespoon
lime juice
preferably fresh
½
tablespoon
honey or maple syrup

garlic clove
minced
¼ - ½
teaspoon
cumin
salt and pepper to taste
Instructions
Cook pasta according to the directions of the box.
In a small bowl, whisk together all the dressing ingredients. Set aside.
In a large bowl, combine the remaining ingredients.
Pour the dressing ingredients over the salad. Toss to combine.
Cover and chill for one hour prior to serving.
