This recipe is super adaptable! You can use whatever veggies you have on hand (and maybe need to get used up before they go bad!). Vegetables that roast well include, but aren’t limited to…
- Potatoes and sweet potatoes
- Peppers and eggplant
- Broccoli, cauliflower, and brussel sprouts
- Onions of all types
- Squash (zucchini, butternut, acorn, etc)

Step One:

One Pan Herbed Lemon Chicken
Instructions
- Choose chicken thighs instead of chicken breast to double the iron content, a nutrient that's critical for babies.
- Skip the salt in the marinade - you can salt the adult section before baking.
- Set aside one section of the pan for baby's meal.
- Place a small baking pan or tin foil over the baby's section to trap in the moisture to keep the food soft and squishable.
For 6 months +
- Cut the veggies in adult finger-sized pieces.
For 10 months +
- Cut the veggies in small blueberry-sized pieces (or keep to the 6 months + size)
